Lunch

One of my current favorite things to put in my salad is marinated peas.
I cook them in a pot with olive oil and brown onion, then I add the frozen peas, chili, salt and a touch of water. I put the lid on and every 5 minutes or so I give them a stir. Once they are soft I add coriander.

This salad was spinach, marinated peas, avocado, lentils, chickpeas, pine nuts, red onion and chicken breast. You have to give this one a try!
I squeezed home made fresh orange juice for this too.
