Belly flattener

Lentils and beans- These are the ultimate belly flattener. People have asked me how I get a flat stomach and diet is by far more important than how many sit ups you can do. Eating them helps prevent insulin spikes that cause your body to create excess fat, especially in the abdominal area. They are almost fat free and a good source of protein. I love to add them to my lunch in a salad. I also make lentil and veggie soups. Perfect meal for this cold weather and they can be frozen and re heated to take to work or school.

Breakfast

Nothing beats a high fiber/carb breakfast! On the menu this morning was whole grain oatmeal and barley porridge in low fat milk (or water if you prefer) topped with honey, buckwheat, chia seeds, coconut, banana and macadamias. This is so quick and easy to make and super filling! I always love to have different ingredients in my pantry so I can mix things up.

Rice Paper Rolls

Home made Rice Paper Rolls
  1. Slice all ingredients- Lettuce, carrot, cucumber, cabbage & Avocado
  2. Place 1 rice paper round in a medium bowl of lukewarm water for 15 seconds or until just soft. Place on a clean tea towel or paper towel.
  3. Arrange all ingredients together (Lettuce, carrot, cucumber, cabbage & avocado). Fold ends in and roll up firmly to enclose filling. Repeat with remaining rice paper rounds and filling.

Afternoon at Nonnas

Last week I spent the afternoon at my Nonna’s house. She always cooks for me like it is Christmas (biggest cutie)
I should have taken a photo of the lunch she made me. It consisted of homemade pasta, chicken schnitzel, homemade olives & Italian sausage, fresh bread with olive oil and balsamic, eggplant parmigiana, salad & fresh snow peas. How could anyone be disappointed about that!! When I say she makes everything from scratch.. I literally mean everything! I have learnt from the best.

I did manage to also fit in desert. I was actually so hungry because I was constantly cleaning and unpacking day in day out because I have been moving houses so I needed lots of food to keep me going ;)

Desert was sliced apples, touch a brandy & lemon juice with melted 70% dark chocolate.
It was actually mouth watering! I would recommend giving this a try. It’s also great because it’s not too heavy.

Eye fillet

Eye fillet medium rare sided with a light salad. I don’t eat red meat everyday because I have never been a massive red meat eater but I do love to have it once every few weeks. Eye fillet is defiantly my number one preference and it is one of the leanest meats J

Breakfast

As the cold weather approaches it is so important we are looking after our immune systems and eating healthy!
This breakfast was to die for and packed with so many nutrients. I love when food looks good, I always think it taste better. The texture of this was also perfect.

I used hemp milk this morning for something different. The benefits of this include:

•  Strengthened Immune System
•  Assist in strengthening Skin, Hair and Nails
•  Heart friendly
•  Increased Mental Capacity
•  Anti-inflammatory agents and improves circulation.

Hemp milk is an incredibly nutritious and tasty alternative to cow's milk. It is always suitable for vegans :)

How to make this.

First of all, I love having homemade cereal in the cupboard so it’s ready to eat. The one I used this morning was rolled oats, quick oats, barley, buckwheat, almonds and walnuts.

Then I added in fresh hemp milk (you can purchase from your whole food store) and then topped it with banana, organic honey, cinnamon and coconut.

I had the most amazing long weekend with my best friend. Never a dull moment with this crazy girl <3

Healthy snacking for weight loss

My favorites are almonds, macadamias and pistachios. They all have their individual health benefits. High in protein and filled with monounsaturated fat that can help lower 'bad' cholesterol. I love to snack on these when I’m hungry. I normally eat a handful after my workout to get me through the morning before lunch. Generally I will eat a piece of fruit first and if I’m still hungry I will have a handful of nuts (This prevents you from over eating them).

Home made banana, coconut and almond ice-cream topped with blueberries, strawberries and raspberries.

I have found an alternitve healthy recipe to ice-cream with no cream ;) Make this amazing desert for all your friends and family. They will love it. This recipe will Serve 4

What you will need:
  • 4 ripe bananas, peeled and sliced into thin rounds
  • ¼ cup finely chopped roasted almonds
  • Half a cup desiccated coconut
  • 2 tsps agave syrup
  • Pinch of sea salt
  • ½ cup unsweetened almond milk (or soy or cow’smilk), cold
  • 1tsp. pure vanilla extract
-Freeze the banana slices on a tray or plate lined with parchment or wax paper. Once the slices are frozen, use them immediately or keep frozen in a zip-top plastic bag or airtight container for up to a month.

-Meanwhile, in a small bowl, combine the almonds with 2 tsps. Of agave syrup, pinch of sea salt and half cup of desiccated coconut and set aside.

-Combine the frozen banana slices, the cold almond milk, the remaining 2 Tbs. of agave syrup and the vanilla in a food processor and pulse until the mixture is the texture of soft-serve ice cream, scraping down the sides as necessary. Don’t worry if the mixture is not totally smooth at first. Once the bananas start to break down and defrost in the food processor, they’ll give in, and the “ice cream” will take shape quickly.

-Spoon the banana “ice cream” into bowls immediately and sprinkle each serving with a bit of the almond mixture and add mixed berries on top. It also tastes amazing with sprinkled desiccated coconut and almond flakes on top. You can pretty much add any of your favourite healthy toppings.
